riconosciuta Patrimonio Culturale Immateriale dell\u2019Umanit\u00e0 dall\u2019UNESCO, \u00e8 uno dei modelli alimentari pi\u00f9 sostenibili al mondo. La Dieta Mediterranea ha un impatto ambientale inferiore rispetto ad altri modelli dietetici grazie alla sua enfasi sugli alimenti locali stagionali a base vegetale. Inoltre, il problema globale della malnutrizione e dell\u2019insicurezza alimentare potrebbe essere risolto sostituendo la maggior parte della carne con alimenti di origine vegetale. Infine, il consumo eccessivo di carne aumenta il rischio di mortalit\u00e0 e numerose malattie croniche, pertanto la riduzione e sostituzione della carne \u00e8 un\u2019azione urgente e vantaggiosa per tutti. Alla luce di questo, l\u2019obiettivo generale del progetto PHASE \u00e8 promuovere un\u2019alimentazione sana e sostenibile concentrandosi sulla riduzione e sostituzione della carne.
